1. Chocolate Chip Cookies
You’ll need the following ingredients:
- ½ teaspoon xanthan gum*
- 1 teaspoon baking soda
- 2 ¼ cups all-purpose gluten free flour
- 1 teaspoon salt
- ¾ cups unsalted melted butter
- 2 ounces softened temp cream cheese
- 1 cup packed brown sugar
- ½ cup white sugar
- 1 ½ teaspoon vanilla extract
- 2 egg yolks
- 2 cups semisweet chocolate chips
Whisk the flour, xanthan (unless your flour blend has it), salt, and baking soda in a medium-sized bowl. Put it aside for now.
Next, get an electric mixer and add the cream cheese and melted butter to a new bowl. Add both sugars. Mix on medium speed for up to two minutes.
Add one egg yolk at a time and the vanilla. Mix this on a lower speed until its blended together.
Place the flour mixture with the wet ingredients and beat on low. Throw in your chocolate chips and mix it by hand. Cover your mixing bowl with plastic wrap. Refrigerate your dough for at least four hours.
To bake your cookies, take out the dough and let it sit on the counter for fifteen minutes. While it’s softening, preheat your oven to 375 degrees F.
Line your cookie sheets with parchment paper. Scoop even amounts of cookie dough spaced a few inches apart. Aim for twelve cookies per sheet.
Pop your cookies in the oven. Bake for 12 minutes. Take the pans out when the edges of the cookies are starting to brown. Leave your cookies on the tray for three more minutes. Then, you’ll want to put them on a rack to cool.
2. Peppermint Patties
You’ll need the following ingredients:
- 1 ½ teaspoons peppermint extract
- ¾ cup sweetened condensed milk
- 4 cups confectioner’s sugar
- 2 teaspoons shortening
- 3 cups semisweet chocolate chips
First, you will mix the peppermint extract and condensed milk in a large bowl. Add a bit of confectioners sugar at a time and beat the ingredients together. You’ll form a stiff dough.
Turn the dough into one inch balls and place them on a sheet of waxed paper. Flatten each one to form patties. Let the patties dry for two hours at room temperature. Turn each one over once while they dry.
On low heat, melt the shortening and chocolate in a medium saucepan. Stir until blended and remove from the heat. Place a patty on a fork and lower the patty into the liquid. Put the patties on the waxed paper until they cool.
3. Peanut Butter Cookies
You’ll need the following ingredients:
- 2 cups white sugar
- 4 eggs, beaten
- 2 cups peanut butter
- 1 ½ cups chopped pecans (optional)
Preheat oven to 350 degrees F and put waxed paper on your cookie sheet. Combine the sugar, eggs, and peanut butter and mix until smooth. Add in the pecans.
Place a tablespoon size of dough on your cookie sheet. Bake your cookies for up to 12 minutes until the edges brown. Let them cool for 10 minutes.
